Day Two

It pretty much feels like a big fat FAIL to do my daily blog at 11:30 pm with only 30 minutes to spare but I don't care because I was busy enjoying my family today! :) Brett got Emersyn's playhouse all built, I baked and cooked, Ems got to play with her cousin and take a good nap, and we got to visit a sweet 5 day old baby girl that was absolutely precious. Holding baby Natalie was such a fun reminder of the baby girl I once held who now thinks it's funny to tell me every time she toots and also a reminder of the little baby boy growing inside me and currently amusing me with those sweet faint baby flutters. :)

I will leave you with one thing of value....this super easy, super yummy snickerdoodles recipe.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons white sugar
  • 2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
  3. Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
  4. Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.
Makes THREE dozen using a medium sized cookie dough scoop. Brett said these are the best cookies that he's ever eaten and he normally isn't a huge snickerdoodle fan! Let me know if you try them!

Pretty sure that's the same snickerdoodle recipe i have used...SO DELISH!!! :)
